Earlier this year I mentioned I’d developed a recipe for my mom who recently went both gluten & dairy free. A modification on a gluten free recipe I developed last a few years ago, the dairy free version is a new favorite for both my parents. My dad couldn’t even tell the difference between the one with buttermilk and the one with almond milk! The original gluten-free goodness known as Sunday morning pancakes. Prior to going dairy-free, my mom was gluten-free. I developed this recipe for us all to enjoy. What do you get when you mix organic cocoa, espresso coffee, sunrise, supportive parents, Puddles, and a new shawl design? A lot of hilarious photo shot outtakes! Enjoy this glimpse into my family life 🙂 Pour carefully, but wait, isn’t the shawl supposed to be visible? Despite the accomplishment at pouring on camera, I noticed later that the foam died before the first photo was taken; ergo, a quick indoor re-shoot of the drink/ shawl combo. My mom, the Celiac, recently had to go dairy free too. In an effort to provide her with a post dinner treat that would sooth her stomach like chocolate used to, I developed this recipe. The ginger is VERY strong… but delicious and addictive! Ingredients:1/2 cup freshly squeezed organic lemon juice1/6 cup organic ginger juice1/3 cup raw honey3 Tablespoons non-GMO gelatin or vegan substitute (such as agar agar) Tools:Measuring cupTablespoon measureWhiskNon-BPA silicon gummy bear molds Helpful hints:1.
